Cauliflower can be boiled, steamed or eaten raw. When cooking, the outer leaves and thick stalks are removed, leaving only the florets. Cauliflower is often served with a cheese sauce or gravy. It can be very successfully mashed and pureed if aloud to cook a little longer, and with a little potato added offers and alternative to mashed potato in many dishes, such as shepherds pie.
